INGREDIENTS
1 cup of P.A.N. Sweet Corn Mix
½ cup of P.A.N. Precooked White Corn Flour
2 apples, diced
2 tablespoons of butter
1 cup of sugar
1 tablespoon of cornstarch or cornstarch
¼ cup of water
1 teaspoon ground cinnamon
Vegetable oil for frying
Powdered sugar for sprinkling
PREPARATION
In a pot, melt the butter, add the apples and cook for 2-3 minutes. Add the cinnamon and sugar and cook for another 3 minutes.
Dissolve the cornstarch in some water and add it to the apples. Cook for 3 more minutes or until it boils and begins to thicken. Remove from heat and set aside. Let it cool for 2 hours in the refrigerator.
In a saucepan, heat enough oil to deep fry the fritters.
In a bowl, mix the apples with the P.A.N. Sweet Corn Mix and form into balls. Bread them with the ½ cup of P.A.N. Precooked White Cornmeal and fry the hot oil until golden brown.
Let them rest on absorbent paper and sprinkle with powdered sugar to taste.
