INGREDIENTS
1 ½ cups Gusto by P.A.N. Black Beans (drained).
1 ½ cups of sweet corn kernel.
1 large tomato.
1 medium onion.
½ red bell bell pepper.
1 ½ cups of cilantro.
¼ cup of extra virgin olive oil.
3 tablespoons of red wine vinegar.
Coarse sea salt.
Freshly ground black pepper.
PREPARATION
Dice the tomato, onion, bell pepper and mix.
Chop the cilantro and add to the vegetable mixture.
Add the Gusto by P.A.N. Black Beans (drained) and the sweet corn kernels to the mixture. In a bowl, combine the olive oil, vinegar, salt and pepper and mix until an emulsion is obtained.
Add the vinaigrette to the salad.
Cover and marinate in the refrigerator for half an hour.
Serve the salad cold.
